Foodie Friday: Roast Beef Sandwich with Onion-Mushroom Dipping Broth

When we are on the road food is never far from our conversation and we try to eat whatever is local to the area. On this trip, we stopped at a friend’s home and had the best roast beef sandwich and dipping broth - it was their take on a French Dip sandwich. Here’s the recipe. Give it a try for lunch or, add a salad, and make it dinner!

Roast Beef Sandwiches with Beefy Onion-Mushroom Dipping Broth 

Broth for Dip

1 box of beef broth

1 stalk of celery, minced

3-4 large mushroom caps, chopped

2 shakes of Worcestershire sauce

1/2 large onion, diced

2 tbsp olive oil

1 tbsp butter

1/8 tsp garlic powder

1/4 tsp red pepper flakes

Sandwich

Cuban bread or French Baguette cut into six-inch-long segments (we cut three segments out of each baguette)

Thinly sliced roast beef from the deli counter 

Sliced Swiss or Provolone cheese

Mayonnaise

Coarse ground mustard (optional)

Salt and Pepper to taste

Putting it all together...

In a large skillet, heat olive oil to a sheen, add onion, and saute on medium-high until edges turn slightly brown, reduce heat to medium and add butter, garlic powder, mushrooms, and celery.

Saute until mushrooms and celery are softened. Add beef broth, red pepper flakes, and salt and pepper to taste. Bring to a boil, then reduce heat and simmer to meld flavors (about 5 minutes).

Slit the top of each french baguette section. (Toast lightly under the broiler if desired)

Spread a 1/2 tsp of mayonnaise on the bread 

Spread a 1/2 tsp of deli-style mustard on the bread (optional)

Layer thinly sliced roast beef on the baguette and top with a slice or two of swiss or provolone cheese.

Place under a hot broiler just long enough to melt the cheese. 

Serve the sandwich immediately with broth in a ramekin on the side for dipping. 

NOTE: If you are wondering about the last shot of the sandwiches under the light, we were using our tabletop oven. It is a terrific appliance for the RV, giving us the ability to bake biscuits, roast chicken, and even cook bacon. It was one of the smartest purchases we have made for the RV. It is so easy to use and performs so well that we often bring it into the house for sandwiches and quick lunches.
