A Sweet Summer Treat: Lemonade Pie
Nothing says "summer" like a tall, cold glass of lemonade. This pie takes that cool sensation to a new level! A fellow camper shared one of these pies with us on our last beach trip and was kind enough to share the recipe. It is creamy and sweet/tart just like a key lime pie. Easy to make and a new favorite!
Ingredients
For the crust
4 oz graham crackers (about 10 crackers)
3 Tbsp sugar
5 Tbsp melted butter
For the filling
6 oz lemonade concentrate, thawed
1 14 oz can of sweetened condensed milk
1 8 oz container of whipped topping like Cool Whip
Topping
1 cup sliced fresh strawberries or blueberries
Instructions
Make the crust
Preheat oven to 350 degrees F.
Crush up the graham crackers into a food processor, then add sugar and melted butter. Pulse to combine.
Press the mixture firmly into the bottom and up the sides of a 9" pie plate.
Bake crust for 7-10 minutes until golden. Remove from oven and allow to cool completely.
Make the filling
In a medium bowl, whisk together lemonade and sweetened condensed milk until combined.
Gently fold in whipped topping.
Bring it together
Spread the filling evenly in the completely cooled crust and freeze until solid.
Cut and serve immediately, topped with berries.
(Note: do NOT put the berries on before you freeze the pie. They get frozen to the pie topping!)
